Kheer – Rice Pudding 7.7/10 November 27 2009





* 1 cup coconut milk

* 1 cup milk

* 1 tablespoon and 1-1/2 teaspoons white sugar

* 1/4 cup Basmati rice

* 2 tablespoons raisins

* 1/4 teaspoon ground cardamom

* 1/4 teaspoon rose water (optional)

* 2 tablespoons sliced almonds, toasted

* 2 tablespoons chopped pistachio nuts




1. Bring the coconut milk, milk and sugar to a boil in a large saucepan. Add basmati rice, and simmer over low heat until the mixture thickens and the rice is tender, about 20 minutes.

2. Stir in the raisins, cardamom and rose water, and cook for a few more minutes. Ladle into serving bowls, and garnish with almonds and pistachios.

I only used about 70% coconut milk. It was quite nice. As I had expected. The addition of raisins and cardamoms were nice. I didn’t have any cooked pistachios so I didn’t add any nuts. I added a bit more sugar, probably around 1 teaspoon more. I also added 2 cardamon pods.
