Indian – Aloo Gobi – 9/10 November 27 2009 Adapted From the food of India Page by Bay Books146


 

3 tablespoon oil

1/2 teaspoon black mustard seeds

1/2 onion

200g potatoes cut into cubes

1/4 teaspoon ground tumeric

1 teaspoon ground cumin and coriander

1 1/2 teaspoon garam masala

4  ripe tomatoes chopped

1 large cauliflower about 1.25kg cut into florets

2cm piece of ginger

1 teaspoon sugar

125ml 1/2 cup of water

Heat oil then add mustard seeds, then onion and potato until lightly browned

Add the spices, then the tomato and stir.

Add the cauliflower until mixed, then ginger, sugar and 1/2 cup of water. Reduce the heat and cover for 15 minutes after bringing it to a boil. Then add salt to taste.

 

Conclusion

I used sweet potatoes and carrots and added courgetts towards the end. I only used 25% amount of the water asked for just to bring the stuck spices from the bottom of the pan. The flavor was quite good, full of flavor from the spices. I used quite a lot, just eyed it really.
