Buttermilk Syrup 8.5/10 for taste but 3/10 in terms of health, too oily November 17 2009

  • 3/4 cup white sugar                               140g
  • 1/4 cup and 2 tablespoons buttermilk            90ml
  • 1/4 cup butter                                       55g
  • 1 tablespoon corn syrup                        15ml
  • 1/2 teaspoon baking soda                     2g
  • 1 teaspoon vanilla extract                      5ml

This recipe’s Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 2 cups.

  1. In a saucepan, stir together the sugar, buttermilk, butter, corn syrup, and baking soda. Bring to a boil, and cook for 7 minutes. Remove from the heat, and stir in the vanilla.

The use of buttermilk and butter made the maple syrup a bit more milky, almost caramel like.
