Asian – Rice Cake (fried) –糍粑 8.5/10 November 17 2009

1 Glutinous rice to 0.8 cup water

糯米飯的煮法:(大同電鍋)

3杯長糯米

2.4杯水

【作法】

將米洗乾淨之後,用加入大同量米杯2.4杯的冷水浸泡,約1個小時。

大同電鍋的外鍋加入量水杯的3格水。

按下開關直到開關跳起之後再悶約20分鐘,即可掀開鍋蓋大,讓多於的蒸汽散除,拌鬆。完成。

【糍粑的作法】

將手沾濕抹上少量的鹽,取放涼的糯米飯放置在鉆板上,用手掌按壓整形成一塊長方形的飯糰,長寬為12cmx8cm,用桿麵杖將糯米飯桿壓緊實成厚約1.5cm的厚度,在將壓緊的糯米飯切割成6cmx4cmx1.5cm的長方塊狀可切成4塊,保持手的濕潤沾一些鹽均勻的在糍粑的表面抹一下。

熱鍋裡放入約3大匙的油,將糍粑煎至兩面以及4邊金黃相酥即可。

由於糍粑本身沒有味道,只是外表有一絲絲的鹹味,所以喜歡的人可以在糍粑上灑上一點糖粉也是甜美滋味。

 

Conclusion

I used about 1 cup glutinous rice to about 0.8 cups of water. The rice was cooked very well, and very easy to manipulate. I fried it with about a tablespoon of oil on a non-oil skillet, took about 7 minutes on each side on 190C.
