冬瓜

1斤冬瓜、150克冰糖、150克红糖,颜色不是很深的那种。

1、冬瓜洗干净,切成小丁(皮和耔保留)
拌入红糖,冬瓜一下就出水了。
2、拌入冰糖
煮,开了后转微火,煮到冬瓜成透明咖啡色就可以。
3、过滤冬瓜丁和耔,留下的是冬瓜茶浓缩露,是浓缩的哦!
装在干净的罐子里,冷藏。
看看,1斤冬瓜只有一点点,大概菜碗1碗吧。
4、喝的时候1:6的比例稀释

做法:冬瓜去皮去籽洗干净,切成块状。在锅内加水煮开后,加入姜片及冬瓜,焖煮40分钟,熄火后盖上锅盖再焖20分钟即可。

台湾冬瓜茶
材料:冬瓜、红糖
做法:冬瓜去皮切成块状,在锅内放水熬红糖,然后把冬瓜倒入熬煮如味,约3小时,滤出冬瓜将其烘干即可。

. 冬瓜要切小塊一點比較容易把味道煮出來。我用的砂糖是light brown sugar,請參考附圖A。最好用顏色較淺的二砂糖(淺色的紅砂糖)以免紅糖味太重蓋過冬瓜味。

Conclusion
Should have just used 100g of rock sugar and brown sugar. Inspite of me using 1.5kg of wax gourd, it was still a bit too sweet. After diluting it, I thought it tasted like wax gourd tea..of course not as fragrant as the traditional ones. My mum just kept saying it to my face “this is not don gua cha..this is not” I thought it was pretty close. Anyways next time will lessen on the sugar. Took me about 1 hour to boil all the liquid until the wax gourd was a bit transparent.
