**Cake – Carrot Cake – Jamie Oliver 9/10 and 9/10 for the mascarpone and icing sugar topping July 9 2009

166% butter, 166% brown sugar, 138% eggs, orange to 180g self raising flour, baking powder, 166% carrots, 66% raisins, cinnamon, cardonmon, ginger powder, salt.

蛋糕材料

奶油300公克, 軟化 120g

Brown sugar 300公克 120g

5, 蛋白和蛋黃分開 2 eggs

柳橙1, 汁和皮屑都要 0.4 orange

自發麵粉180公克 72g

泡打粉1.5小匙 1/2 and 1/8 teaspoon

胡蘿蔔300公克, 削皮刨絲 120g

葡萄乾120公克                               48g

肉桂粉1.5小匙 1/2 and 1/8 teaspoon

肉豆蔻1小匙                                               0.4 teaspoon

薑粉1小匙 1/2 and 1/8 teaspoon

鹽少許

糖霜材料

Mascarpone 250公克 100g

糖粉90公克 36g

萊姆1, 汁和皮屑都要 0.4g

(把所有材料混合攪拌均勻冰冰箱至少半小時即可)

奶油和糖請食物調理打到呈蓬鬆輕盈的狀態, 移到料理盆,

加入蛋黃攪拌, 蛋黃要一顆一顆加進去.

Carrot cake (胡蘿蔔蛋糕)-090706

柳橙汁和皮屑.

加入麵粉攪拌到這個程度, 柔順滑溜溜沒有泡泡^^

加入胡蘿蔔/葡萄乾/香料, 混合均勻.

然後五顆蛋白加一點鹽打到溼性發泡,

倒進來混合, 輕輕攪拌完成.

烤盤要先用奶油塗過, 18050分鐘.

Conclusion

This was pretty good, tasted like a rich orange scented carrot cake with raisins, and the mascarpone + icing sugar topping was brilliant, even without the lime.
