Asian – Whistle Noodle 9/10 June 4 2009

哨子涼麵

一.炸醬:

材料:

豬絞肉350g,五香豆干5-6片,青蔥3-4支,蒜頭4瓣,

調味料:

甜麵醬4大匙,醬油2大匙,米酒2大匙,黃砂糖1.5大匙,

辣豆瓣1.5大匙,

步驟:

1.五香豆干切小丁,青蔥,蒜頭切末

2.鍋中熱2大匙油,將豬絞肉放入炒至變色(炒的過程中用

鍋鏟將豬絞肉搗碎)

3.依序將青蔥,蒜頭末,豆干丁加入翻炒1-2分鐘

4.將所有調味料加入混合均勻

5.蓋上蓋子小火悶煮至湯汁收乾即可

二.組合

材料:

細麵,炸醬,小黃瓜,紅蘿蔔,鹽炒花生,熟芝麻,香油適量

調味醬汁:

醬油,蘋果醋

依照醬油,蘋果醋 1 : 1 的比例將所有材料混合均勻即可

(若沒有果醋可以使用米醋代替,再酌量添加細砂糖即可)

步驟:

1.小黃瓜,紅蘿蔔切成細絲,鹽味花生切碎

2.細麵依照包裝標示時間煮熟,撈起馬上淋上一些香油拌

勻用電風扇吹涼

3.將所有材料放上,淋上適量調味料即可

Conclusion

This was quite good. The sauce was mild, with a subtle spicy flavor. I thought it was a very good Zha Jang Mien, because it was not salty, but rather it was flavorful. The sauce on itself tasted quite nice, very mild but flavorful, but the soy sauce and apple cider on its own was a bit too pungent, but after blending in with the noodles, they gave the noodles tanginess which was quite acceptable, and then everything blended together. Wasn’t the best, but a very good combination of things.
