Asian – Spicy Smelly Tofu麻辣臭豆腐 9/10 for sauce but a bit spicy July 2 2009

材料:

傳統臭豆腐6塊

鴨血1塊

紅辣椒2支

水1200cc

香菜少許

調味料

花椒2大匙

辣豆瓣醬2大匙

辣油2大匙

百草粉1小匙

鹽1小匙

酒1大匙

二砂糖1小匙

做法:

1.臭豆腐洗淨,鴨血對切成兩半備用

2.起鍋燒熱4匙油,放入花椒用小火煸炒,炒至呈褐色後,盛出來裝入棉布袋中

3.利用餘油加入辣椒、辣豆瓣醬,百草粉、酒、水、鹽、二砂糖、紅油調味至煮滾

4.放入臭豆腐、鴨血、棉布袋,以中小火燉煮10分鐘即可

廚師叮嚀:

1.若改用高湯可以更增添香氣

2.煮好的臭豆腐浸泡30分鐘後會更入味

Conclusion

This was quite good. The sauc, with just adding water, tasted like oily chilli water,  I used vegetable stock, and that brought the flavor out.
