Asian – Pancake – Turnip/radish Pancake 蘿蔔絲餅 8/10 March 13 2009


【材料】

蘿蔔 200公克                                    100g

蝦米 20公克

蔥末 20公克

絞肉 50公克

糖 1大匙

水 50㏄

油皮:

中筋麵粉 200公克                                        100g

沸水 100公克                                                            50g

冷水 40公克                                                  20g

豬油 30公克                                                  15g

油酥:

低筋麵粉 140公克                            70g

豬油 70公克                                      35g

調味料:

鹽 1小匙

香油 1大匙

胡椒粉 少許

鹽 少許

雞粉 少許

【做 法】

1.將中筋麵粉加入沸水攪拌再加入冷水拌成麵團。

2.作法2的麵團加入豬油揉至光滑,放入容器,蓋上保鮮膜醒20分鐘,作成油皮。

3.將低筋麵粉、豬油混拌均勻,分成10小塊,做成油酥。

4.將作法2的油皮,包上作法3的油酥,撖成長條狀後,從尾端捲回成圓筒狀,再重複一次;用保鮮膜蓋上醒20分鐘,作成麵皮。

5.將蘿蔔刨絲,加入鹽醃15分鐘,擠乾水份;將材料中的糖、水拌勻成糖水。

6.將蝦米泡軟切末,加入少許油略拌一下,放入已預熱烤箱中,以200℃烤約3分鐘後取出,

以作法5的蘿蔔絲、絞肉、所有調味料拌勻成內餡備用。

7.以作法4的麵皮,包入作法6的內餡,刷上作法5的糖水,沾上白芝麻,放入已預熱烤箱中,以200℃烤約25分鐘即可。

Conclusion

Yeah, you don’t need to cook the turnip before putting it in. This was easy to make, and it was done exactly at the prescribed time and temperature. It was a bit salty, so I added some zucchini.
