Asian – Dumplings – Radish Flat Dumplings 蘿蔔絲餅9/10 for the dough

Dough = 56% boiling water and 20% cold water to all purpose flour

蘿蔔絲餅 18個                   (6)

皮:

中筋麵粉……………750克                         250

沸水…………………420克                         140

冷水…………………180克                         60

材料:

白蘿蔔…3000克(4、5條)                                   1kg

胡蘿蔔……100克(1小條)                                 33g

青蔥……………………5支                                     1.6g

蝦皮…………1杯(約40克)                                13g

香油…………………3大匙                                     1 tablespoon next time use 1 tablespoon and a half

鹽、味精………各1小匙半                                                1/3 tablespoon next time use a teaspoon

白胡椒粉……………1小匙                                     1/3 teaspoon next time use a teaspoon

手粉……………………適量

沙拉油…………………適量

做法:

1)麵粉放盆中,把滾水沖入,用筷子攪拌使之散熱。稍涼一些就可以加入冷水,攪拌,揉成均勻柔軟的麵糰。放著醒約20分鐘。

2)白蘿蔔去皮刨成粗絲,胡蘿蔔刨細絲,一起放鍋中乾炒一下。放涼,用手擠掉水份。

3)蔥切碎,和蝦皮、調味料都加入擠了水的蘿蔔絲中一起拌勻即是餡。

4)工作枱上撒手粉,把麵糰搓長,切成18小塊,一一沾粉壓扁再擀圓。

5)包餡。可以像影片裡的餡餅包法,也可以用拇指直接把餡下壓,虎口把麵皮收攏捏緊──因為蘿蔔餡不易滑動,所以包法比較簡單。

6)平底鍋加油燒熱。手沾油把餅按扁,哪裡快破了就把麵糰推過來補一下。放在鍋中用小火煎,兩面各煎約2、3分鐘即可。

註:
做蘿蔔絲餅最需要經驗的是乾炒蘿蔔絲的火候控制;若是炒太久,蘿蔔絲餅煎好後裡面的蘿蔔絲會太軟熟,若炒不夠久會有生味;最好能做到餅煎好,蘿蔔絲也熟了,卻還有一點脆。

Conclusion

Umm the radish was a bit on the sweet side, perhaps because I dry cooked it a bit too long, like about 10 minutes.  IN order to cook, oil was put in first at high heat, and then after sizzling starts for a while, add water, and then close lid and turn down the heat. Took about 10 minutes on each side for it to become crispy and very delicious. But the filling wasn’t as delicious as the dough.

The dough was really good. However, it was so wet to start off with, so next time will increase the liquid by 30%, both the cold and boiling water. Umm, yeah, and the dough was a bit too much. I think because it was too wet, and I ended up adding like 1 cup or so of flour and that increased the dough, and I had enough dough to do like 10 -12  huge dumplings
