Asian – Green Tea Tofu and Honey Red Beans. 8/10 May 22 2009

蜜紅豆

材料:

紅豆1斤(選顏色越淺越好) 水6又1/2杯 二砂糖1斤(或12兩) 鹽1/2t 外鍋水3杯 內鍋水6.5杯

作法﹕

1.紅豆加入能淹過的冷水,在爐火上慢慢加熱,直到水完全煮開,

倒掉多餘的水,再次洗淨瀝乾。

2.紅豆加入200㏄6杯半(量米杯8杯)的水放入電鍋,外鍋加200㏄1.5杯

(量米杯2杯)的水煮至開關跳起,先悶15分鐘

3.挑一顆紅豆看是否綿密,若不夠綿密則先翻動豆子,外鍋再加1杯量米杯的水,

直到開關再次跳起後再燜5分鐘。

4.將紅豆趁熱取出,加入適量的糖及少許鹽,用筷子攪拌均勻,倒入容器中放涼成為蜜紅豆。

抹茶豆腐

材料:

蜜紅豆適量 抹茶粉1大匙半 細砂糖1/4杯 洋菜粉1小匙半 玉米粉5大匙 奶水半杯

做法:

1.鍋中倒入奶水,並加入6杯水煮開成熱奶水備用

2.取一容器,放入細砂糖、洋菜粉、抹茶粉和玉米粉搖勻,再加入半杯水調勻煮開成抹茶漿備用

3.我們將抹茶漿加入熱奶水中調勻,煮至沸騰後熄火,再倒入盤模中,

等冷卻凝固後再放入冰箱中冷藏備用

4.食用時,將抹茶豆腐切塊後裝入碟子中,再淋上少量蜜紅豆,就完成今天的這一道抹茶豆腐了

ps.

1.抹茶豆腐中的抹茶我是用日本抹茶粉,做出來的香味和色澤都會比國產

的抹茶粉清香而且漂亮.

蜜紅豆粒餡
紅豆 300g
鹽 1/4t                0.16t
水 3.5杯(量米杯)                 1.45
二砂糖 250-300g                     125
麥芽糖 30g                             12.5g
奶油 45g                                 18.75

作法:
1、紅豆洗淨,挑去浮在水面的壞豆,泡水(淹過即可)3小時以上。整鍋連水置爐火上煮開約4-5分鐘,倒入200cc的冷水,再度煮開5分鐘,倒掉煮汁去除苦味,瀝乾

2、 重新加水3.5杯再煮開一次,熄火蓋鍋放涼
3、 入電鍋,外鍋加水2杯 煮至開關跳起,再悶30分鐘
4、 加入砂糖、麥芽、奶油,入炒鍋翻炒至汁收乾

*作法1…加冷水的目的是防止紅豆外皮變皺

*紅豆選購新鮮的小紅豆,口感好也較容易煮透,新鮮豆子可省卻泡水3小時的步驟

*加麥芽糖和奶油可增加色澤也較為潤口,不喜加油者,奶油部份可略;如果想稀釋當紅豆湯喝….奶油就不必加

*糖量減越多….保存期限越短….所以不建議過度減糖

Conclusion

This was quite nice. If it hadn’t been so freezing this week, this would have been great in the summer. Umm, the green tea jelly had the right amount of tea strength, and it wasn’t sweet. It needed the sweet azuki beans to bring out its full flavor, and it did. Very refreshing, however, body responded by dropping a few temperatures after having this..
