Asian – Bread – Phillipine Bread 菲律賓麵包 6/10 whilst warm, 8/10 after cooling April 7 2009

old dough = 58% high grade flour, 1.6% yeast, bit of salt

lt, 8% sugar to high grade flour

Main Dough = 1.3% yeast, 33% milk, 16% egg, aromatic milk powder, vanilla powder, 20% sugar, 1% salt, 13% butter, 43% Old dough to high grade flour

Conclusion

I did two variations.

One without pressing the dough and folding it. This made a fluffy dough whilst warm. When it cooled, it was still fluffy, but ..no taste. After further cooling = 8/10…quite good, chewy and firm texture

One with pressing the dough and folding it. You can fold the dough as many times as you want. Whilst warm, it was quite soft, and no flavor. However, after it cools, a slight hint of vanilla essence + the texture becomes hard and chewy……bringing out the sweet flavors of this bread. Too bad I didn’t have aromatic milk powder and vanilla powder. I used vanilla essence and milk powder instead.

菲律賓麵包(約10個)

先做老麵:(約195克)

高筋麵粉120克..水70克..燕子牌速發酵母2克..美味鹽少許..細砂糖10克攪拌至均勻成糰後..發酵30分…只取所需的量使用..剩餘的冷藏或是冷凍保存!!

麵包材料:

燕子牌速發酵母4克..四方鮮奶100克..高筋麵粉300克..蛋1個..奶香粉2小匙..香草粉2小匙..細砂糖60克..美味鹽3克..奶油40克..老麵130克..

作法:

1. 將全部材料放入麵包機攪拌盆中攪拌至均勻..取出用壓麵機重複壓至表面光滑!!壓的時候可沾些手粉…

2. 桿壓完畢後慢慢捲起..需捲緊..表面稍壓扁…分割成10等份…每個麵糰中間割一刀至一半深…然後放至鋪了烘焙紙的烤盤上做最後發酵!!

3. 最後發酵至一倍大..烤箱預熱200度…表面刷上蛋奶水後進爐烘烤10-12分即可..烘烤期間需刷蛋奶水2-3次….

ps.

烤箱溫度時間僅供參考…粉類均須過篩…

蛋奶水作法:

鮮奶30克..蛋黃1個攪拌均勻…

整形部分可依個人喜愛變換!!也可以包入餡料…另..這種麵糰可做造型麵包…

材料:

速發酵母4克.

奶水50克(三花奶水evaporated milk,或全部使用牛奶代替奶水和水的分量也可以,共110g)

水60克

蛋1個

奶香粉1小匙..香草粉1小匙

細砂糖60克

高筋麵粉300克

奶粉20克

鹽3克

奶油55克

老麵130克(作饅頭剩下來的,我覺得不加也可以,會更好揉,不加的話其他材料都不變)

作法:

1.老麵撕小塊倒入打散的牛奶水和蛋類先稍微拌勻

2.將粉類砂糖等先拌勻,中間挖井,倒入1

3.大略拌勻後,蓋上溼布休息十幾分鐘

4.十分鐘後再取出楺勻(現在會好揉很多),再包入奶油,徹底揉進麵糰中

5.再蓋上溼布休息十分鐘

6.取出後用桿麵棍壓平,折起,再壓平,折起共三次

7.現在就可以做基礎發面了 (講究些可再重複步驟5.)

8.待麵糰發至兩倍大,取出,再壓平,折起,再壓平,折起共三次(如果有壓麵機就用)

9.再蓋上溼布休息十五分鐘

10.取出桿平,捲起,休息十分鐘再切塊,中間再切一小刀

11.待發至一倍大(喜歡更結實就發小一點),抹上奶水或是蛋黃奶水,

送入已預熱好190度的烤箱,烘烤10-12分即可
