Dips – Onion Dip – Finger Lickin’ Onion Dip 8.5/10

* 1-3/4 teaspoons extra virgin olive oil 9ml
* 3/4 teaspoon unsalted butter 4g
* 1/4 large yellow onion, halved and sliced thin
* 1/8 teaspoon salt, or more to taste 0.8g
* 1/4 teaspoon black pepper 0.5g
* 1/4 teaspoon dried basil 0.2g
* 1/4 teaspoon paprika 0.6g
* 1/4 teaspoon dried tarragon 0.4g
* 1/4 pinch brown sugar (optional)
* 1/2 ounce fresh goat cheese, crumbled 10g
* 1/2 cup and 2 tablespoons sour cream 145g


1. Melt the butter with the olive oil in a shallow skillet over medium heat; cook the onion in the butter and oil until translucent. Season with salt, pepper, basil, paprika, tarragon, and brown sugar. Reduce heat to medium; cook and stir until the onions have softened and caramelized, 10 to 15 minutes. Remove from heat and set aside to cool.
2. Mix the goat cheese and sour cream together in a bowl; stir the onions into the mixture.

The onions caramelized at about 15 minutes on medium heat. Umm, caramelized onions tasted had a sweet fragrance by itself, and worked quite well with the sour cream after combining. It was like sour cream with bits of sweet pieces inside.
