Asian – Kuih Bingka Ubi 8.5/10 for taste but a bit too sweet

* Ingredients:
* 1 lb grated tapioca(casava) 453g =114g
* 1 cup sugar ¼ cup
* 1 cup coconut cream and 1 tbsp for glazing ¼ cup
* 1 stick (4 ozs) butter 113g  28g
* 2 large eggs ½ egg
* 1/4 tsp salt 1/16 tsp
1. Grease a 6″ x 6″ square tin.
2. Preheat oven at 375 F
3. Mix all the ingredients in a large glass bowl and microwave on high 1 minute at a time until mixture is thick.
4. Pour into greased tin and bake for 30 minutes.
5. Glaze the top with 1 tbsp of coconut cream and broil/grill until brown.
6. Cool before cutting into pieces.

Hmm, always wondered what cassava cake tasted like. As usual, my cassava ended up having too much water, because of not properly draining it, despite me also using the adjusted water for undrained cassava. Next time I will reduce the water by 50%. By the way, this tasted kinda like a slightly buttery coconut….pudding, only with a more gooey and particle like texture coming from the cassava. This had a strong cassava fragrance, which reminded me kinda like pandan. Even after cooling, it did not harden as I would have hoped, which I think was due to too much water in the cassava.
