Bread – Dosa 3 – With soya Flour 9/10


* 3/8 cup rice flour 89
* 2 tablespoons black urad dal four 30
* 2 tablespoons soya flour 30
* 1/2 teaspoon fruit salt 2.5
* salt
* 1/2 cup water 118
Other ingredients
* 1/2 teaspoon olive oil 2.5
Mix all the three flours and salt with water in a mixing bowl to obtain a thin batter.
Keep aside on the kitchen countertop for 30 minutes.
When ready to prepare dosas, sprinkle the fruit salt on the batter. Mix gently.
Heat a non-stick pan.
Grease it lightly with oil.
When it is hot, pour one quarter of the batter on the pan.
Spread it out in a circular motion to make a thin dosa.
Cook on one side, then pour a little oil along the edges so that it turns crisp.
Fold over and serve.
Repeat with the remaining batter to make 3 more dosas.
Serve with low cal green chutney.

This was the best dosa I have made. Very fragrant, perhaps due to the high percentage of salt. The dough was not very wet, so it was easy to make it thin into a crispy dosa. It seems to already have a fermented taste, perhaps from the soya flour? Not sure. But a very flavorsome dosa, and very quick and easy too. By the way, the numbers next to the cups in the ingredients are based on volumes, not grams, so that explains why I always get inaccurate measurements.
