Aloo Fry – Friend’s Recipe 8.5/10

Servings: 2

6 medium sized potatos, sliced or in small chunks
1/4 cup cooking oil
1 tea spoon Mustard Seeds
1 1/2 tea spoon Salt
1/2 tea spoon Tumeric powder
1 tea spoon Chilli powder
1 tea spoon Coriander and Cumin powder

1. Heat oil in a non stick pan and add mustard seeds. Cover it.
2. Heat oil until mustard seeds finish popping
3. Carefully add the potatos, salt and mix.
4. Add the tumeric powder and mix.
5. Add chilli powder and mix (add more if you want it spicy!)
6. Add coriander and cumin powder and mix.
7. Cook covered and mix occassionaly till potatos look golden and are soft (cooked) on the inside when snapped.

Optional Adds:

Crushed Garlic or
Sliced onion and/or
Kumara (1 for every 2-3 potatos) – sliced same as potatoes

Conclusion This was quite good. I’ve made A similar potato dish before, but I boiled the potato first instead of frying them. Frying them really makes a difference, and really brings out the flavor of the spices. Also, I didn’t add much salt before, but this time I followed the recipe and the salt really brought out the flavor of the spices as well. Adding a bit of amchur (mango powder) made this dish a bit more tangy.
