Bread – Cornbread – excellent and healthy Cornbread , 8/10

85% cornmeal, 28% white sugar, 1% baking soda and salt, 85% yogurt, 71% eggs to flour
INGREDIENTS (Nutrition)
• 1/4 cup unbleached flour 35g
• 1/4 cup cornmeal 30g
• 1 tablespoon white sugar 10g
• 1/4 teaspoon baking soda 1g
• 1/8 teaspoon salt 1g
• 1/4 cup plain nonfat yogurt 60ml
• 1/2 eggs, beaten 25g
 Maybe add 7.5ml of honey

Method
1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8×8 inch baking pan.
2. In a large bowl, mix flour, cornmeal, sugar, soda and salt. Stir in yogurt and eggs. Do not over mix, stir only until well blended. Pour batter into prepared pan.
3. Bake in preheated oven for 20 to 25 minutes, or until center of the bread springs back when gently pressed.

Conclusion
I didn’t put any honey in. I think this was the best cornbread that I had made. The bread had a very strong texture, and the yogurt really brought out the flavor of the cornbread.
