Scones – Green Tea Scones 8/10 but too expensive to make

25% butter, 15% cream, 25% cream, 3.5% baking powder, 25% sugar, 2% green tea powder, salt, 10% egg, 25% cranberries to cake flour

What you need

125g Unsalted Butter
75g pure cream (a)
125g pure cream (b)
500g cake flour
17g baking powder
125g sugar
10g green tea powder
2g salt
1 egg
125g dried cranberries

Method
Sift the green tea powder, cake flour and baking powder.
Cream butter and sugar till light.
Add the egg and beat till incorporated.
Pour the cream (a) bit by bit while mixing till well blended.
Add the rest of the cream (b) and slowly add in the flour. and beat till incorporated.
Add in cranberries and mix well.
Transfer the dough and lightly roll it to about 1.5 inch thick. Cut with a cookie cutter.
Bake for about 12 min at 230 degree celcius or till brown.

Conclusion
This was quite good. The texture was very flakey, and the sweetness was just right. I didn’t put any cranberries inside. However, it was too expensive to make. I only used 70% of the green tea powder because that’s all I had, and it costed around $3.40 NZ.
Using only 70% of the green tea powder only made the scones have a subtle green tea fragrance.
