Scotch Pancakes 8.5/10

What you need
25g butter, melted 12.5g
100g plain flour 50g
2 tsp baking powder 1tsp
50g castor sugar 25g
pinch of salt
1 egg beaten 25g
1 tbsp lemon juice 1/2 Tbsp
65ml milk 33g

For the sauce
100g clear honey
grated rind and juice of 1 lemon

Sift the flour and baking powder. Mix sugar and salt into a bowl.
Add the egg and lemon juice. Mix together to make a smooth batter, gradually add the milk. Stir in the melted butter
Heat a frying pan and grease lightly and add the batter
Cook till brown on both sides. Keep warm.
Prepare the sauce by gently heating the honey and lemon juice and rind in a small pan.
Pour hot sauce over hot pancakes. Serve.

The butter and lemon juice made this pancake different from the other pancakes that I have made. It hada nice texture. I just poured a bit of the batter onto the pan and didn’t have to do a thing after that….it just formed into shape by itself. Without the lemon juice, this pancake would have been as bland as any other pancakes.
50% sugar, 50% eggs, 15% lemon juice, 65% milk, 25% butter
