Sauce – Teriyaki Sauce 2 8/10, not sweet but a bit too salty so added a bit more water

INGREDIENTS (Nutrition)

* 2 tablespoons and 2 teaspoons mirin (Japanese sweet rice wine) 40ml
* 1/4 cup soy sauce 60ml
* 1 teaspoon rice vinegar 6ml
* 1/4 teaspoon sesame oil 1ml
* 1 tablespoon and 1 teaspoon white sugar 15g
* 1-3/4 cloves garlic, minced
* 3/4 teaspoon minced fresh ginger 1g
* 1/4 dash red pepper flakes
* black pepper to taste

Method
1. Bring mirin to a boil in a saucepan over high heat. Reduce heat to medium-low, and simmer for 10 minutes. Pour in soy sauce, rice vinegar, sesame oil, and sugar. Season with garlic, ginger, pepper flakes, and black pepper; simmer an additional 5 minutes. Store in a tightly sealed container in the refrigerator.

Conclusion
It was a bit too salty so I added a bit more water. More sesame oil could be added. Though it would have been perfect with the dish that I made that included mushrooms which gave out water.
