Asian – Red Chilli Oil 油泼辣子


* 100 g Red chilli powder 25g-I only used 20%
* 20 g Chilli flakes 5g
* 1 tsp Szechuan Pepper powder – ¼ tsp I used 200% grinded peppercorn
* 1 tsp Ginger powder ¼ tsp
* 1/2 tbsp Warm water 1/8 tbsp
* 1/2 tbsp Light soya sauce 1/8 tbsp should be more
* 4 Garlic cloves, smashed 1 Garlic
* 1 Star anise ¼ anise
* 250 ml Salad oil 62.5ml
* 2-3 slice Ginger root 1 slice
* 1/3 tsp Szechuan peppercorns 1/12 teaspoons
* 1 tbsp White sesame, roasted ¼ tbsp didn’t use this

Method /

1. Combine together chilli powder, flakes Szechuan pepper powder and ginger powder in a bowl. Blend in water and soya sauce. Add in garlic and star anise.
2. Heat the oil in a heavy skillet over medium-high to high heat until it is starting to smoke. Remove the skillet from the heat. Spoon oil gradually over the prepared chilli mixture. Keep stirring while infusing oil into the chilli. Sprinkle roasted sesame seeds over and let cool.

As soon as the oil was poured into the cup, it started sizzling. With only 20% of the red chilli powder, it was already a bit hot. Using 40-50% of the red chilli powder would probably be the limit of my tolerance level.
