Asian – Daeji Bulgogi – Spicy Korean pork Barbeque 8/10

Ingredients
• 1 pound pork tenderloin, trimmed
• 2 tablespoons brown sugar
• 2 tablespoons low-sodium soy sauce
• 1 1/2 tablespoons sambal oelek or Thai chile paste
• 1 teaspoon minced peeled fresh ginger
• 1 teaspoon dark sesame oil
• 1/2 teaspoon crushed red pepper
• 3 garlic cloves, minced
• Cooking spray
Preparation
Wrap pork in plastic wrap; freeze 1 1/2 hours or until firm. Remove plastic wrap; cut pork diagonally across grain into 1/16-inch-thick slices.
Combine pork, sugar, and next 6 ingredients (sugar through garlic) in a large zip-top plastic bag. Seal and marinate in refrigerator 1 hour, turning bag occasionally.
Prepare grill.
Place a wire grilling basket on grill rack. Remove pork from bag; discard marinade. Place pork on grilling basket coated with cooking spray; grill 5 minutes or until desired degree of doneness, turning frequently.

Conclusion
I used thai chilli sauce instead of paste so it was more watery than it was supposed to be. However, the taste was very good. For the soy sauce I used light soy sauce. I didn’t like ginger that much so could have put less, but restaurants use as much so it wouldn’t have been authentic if I ommittd the ginger. I marinaded vegetables in it for 1 hour then put into a baking dish into the oven at 200C for 25 minutes taking the top off for the last 7.

Bulgogi recipe:
1. Slice 1 pound of beef thinly
2. Mix these ingredients to make marinade sauce:
3 tbs of soy sauce,
3. 3 tbs of water,
4. 2 tbs of sugar,
5. 1 tbs of honey,
6. 1tbs of sesame oil,
7. 1tbs of toasted sesame seeds,
8. 2 chopped green onions,
9. 3 cloves minced garlic,
10. 1 ts of black pepper
11. Marinate for at least 2 hours and keep it in the refrigerator.
12. Cook it on a pan or a grill, and transfer to a plate or a cast iron plate to serve.
13. Sprinkle chopped green onion and toasted sesame seeds

Conclusion
This tasted very good. I marinaded vegetables with this and put it into a baking dish and heated it in the oven for 20 minutes at 200C then took the top off Could use 1.5x more black pepper, 1 more cloves of minced garlic, 20% less brown sugar.
