Asian – Glutinous Rice Chicken糯米鸡

Ingredients (6 serves):
3 cup glutinous rice ¾ cup
300gm boned chicken thigh, sliced
Handful dried shrimp, washed
1/4 cup chopped shiitake mushroom (soaked) 1/16 cup
1-2 Chinese sausage, thinly sliced (omitted this time, no stock on hand)

Ingredients A
2 cm ginger (finely chopped) 0.5cm
1 clove garlic (finely chopped) ¼ clove garlic
1 tsp sugar ¼ tsp sugar
1 tsp sesame oil ¼ tsp sesame oil
½ tbsp oyster sauce 1/8 tbsp oyster sauce
½ tsp salt 1/8 tsp salt
1 tsp corn starch ¼ tsp corn starch

Ingredients B
2 tbsp cooking oil ½ tbsp oil
2 shallots (chopped) ½ shallots–better to add another ½ onion
4 cloves garlic (chopped) 1 cloves garlic-I added minced garlic, should add bit more
*1 tbsp thick soy sauce ¼ tbsp–should increase by 30%
*2 tbsp oyster sauce ½ tbsp–Should increase by 20%
*½ tsp salt (or to taste) 1/8 tsp
*½ tbsp sesame oil 1/8 tbsp
*½ tsp grind white pepper 1/8 tsp -Should increase by 20%

Directions:
1. Preparation in advance: Wash glutinous rice and soak in the water for 3-4 hours. Drain. Marinate chicken with all ingredients A for at least 30 minutes.
2. Heat oil in wok, saute garlic and shallot until fragrance.
3. Stir in dried shrimp and mushroom. Stir-fry until all water is absorbed.
4. Add in glutinous rice, and all other ingredients B*. Stir to until all rice is coated with the sauce.
5. Remove from heat.
6. Layer 2-3 slices of Chinese sausage, then 4-5 pieces chicken in a small bowl, and fill in glutinous rice until 3/4 full.
7. Steam for 30 minutes or until the rice is cooked.
8. Turn out the glutinous rice upside down onto a plate and serve warm.

Conclusion
This was very good. I didn’t add any water, just soaked the glutinous rice for 4 hours. The flavoring was just perfect, mild at the same time flavorful. Next time I would like it to be more flavorsome…so I have put the recommended amounts on the recipe.
