Asian – Chinese Rice Muffins 8.5/10

• 100 g Rice flour 50g
• 3 g Baking powder 1.5
• 35 g Sugar 17.5g
• 130 ml Water 65g
• 10 g Raisin to garnish (optional) •

1. Place sugar and water in a sauce pot and boil over the low heat until the sugar are dissolved.
2. Grease 6 muffin cups and set aside. Sieve together the rice flour and baking powder. Repeat twice.
3. Add the liquid into the rice flour mixture.
4. Pour the batter into the muffin cups and steam over the high heat for 10 minutes. Garnish with the raisins.

This was easy to make. I steamed it for 10 minutes more because I was distracted, and they ended up a bit dry and not as fluffy as I had expected when they cooled down. Nevertheless, I really liked the sweet rice flavor of these Chinese rice muffins..and it didn’t seem too indigestible too.
