Jelly – Red Bean Jelly 8.5/1-羊羹红豆糕

• 300 g Red Bean Paste 75g
• 50 g Sugar 12.5g
• 240 ml Water 60ml
• 20 g Gelatin powder 5g
• Drops of vanilla extract
 610g


• Add sugar and water in a pot, bring to a boil and simmer until the sugar is completely dissolved. Remove. Add in gelatin powder and stir to dissolve.
• Add in red bean paste and vanilla. Stir to combine. Pour into a mould or individual dishes and leave to cool. Chill until set and Serve

It’s good to use a chunkier red bean paste for these. After the gelatine had set in the fridge, umm, the texture was that of a thick mousse. I don’t know how they make it so they end up in a very chewy way. Anyways, this one worked for me, but because there was gelatine inside I had to throw it away. By the way I only used 80% of the sugar and that worked for me.
