Cake – Secret Midnight Moon Better than Chocolate Sex Cake 9.5/10

INGREDIENTS (Nutrition)
• 1/2 cup self-rising flour 60g
• 1/2 cup white sugar 100g
• 1/4 cup water 60ml
• 2 tablespoons butter 30g
• 2 tablespoons shortening 25g
• 1 tablespoon unsweetened cocoa powder 5g
• 2 tablespoons buttermilk 30ml
• 1/4 teaspoon baking soda 1g
• 1/4 teaspoon vanilla extract 1ml
• 1/2 eggs 25g
• 2 tablespoons whiskey 30ml
• 2 tablespoons strong brewed coffee 30ml

• 2 tablespoons butter 30g
• 1 tablespoon and 1 teaspoon buttermilk 20ml
• 2-1/4 teaspoons unsweetened cocoa powder 4g
• 3 tablespoons confectioners’ sugar 20g
• 1/4 teaspoon vanilla extract 1ml

DIRECTIONS
This recipe’s Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 1 – 9×13 inch cake.
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch pan with cooking spray.
2. Combine flour and white sugar in a large bowl and set aside.
3. Put 1/2 cup buttermilk into a large glass and add baking soda, stir until combined, set aside.
4. In medium sauce pan over medium heat combine water, shortening, 1/2 cup butter and 4 tablespoons cocoa. Stir until shortening and butter are melted. Allow to boil on medium heat for 5 minutes.
5. Add chocolate mixture to dry ingredients and mix until well combined. Add buttermilk baking soda mixture, stir until blended. Add eggs and mix. Add the whiskey and the espresso and keep mixing. Add 1 teaspoon vanilla and mix well. Pour into a 9 x 13 inch pan that has been sprayed with cooking spray.
6. Bake at 350 degrees F (175 degrees C) for 25 minutes.
7. To Make Frosting: Combine 1/2 cup butter, 1/3 cup buttermilk, and 3 tablespoons cocoa in medium sauce pan, allow to come to a boil over medium heat. Remove from heat and add confectioners sugar and mix well, add 1 teaspoon vanilla and chopped nuts. Pour over hot cake. Allow cake to cool. The longer this sets, the better it gets

Conclusion
Wow…this was really good. There could be a little bit more whisy i.e 5% – 10% more, but the amount was just right on the spot. I used instant coffee granules, so that may explain why there was not much coffee flavor there. I did not make the icing, but the cake was very good. At first, it smelt a bit like egg, but the smell was more from the whiskey. It was a very moist cake. Unfortunately, my cake kinda sank in the middle, but other than that the taste was very good. A moist cake that has the bitter and sweetness of whiskey and chocolate. Yea the dough was a bit on the liquid side, and I was very surprised that it was actually done in 25 minutes on the spot..wow.
