Cookies – Amaretti 9.5/10

• 1/2 cup blanched slivered almonds 70g
• 1/4 cup white sugar 50g
• 1/2 egg whites
• 1/8 teaspoon almond extract 0.8ml

This recipe’s Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 2 dozen.
1. Preheat oven to 300 degrees F (150 degrees C). Line baking sheets with parchment paper.
2. In a food processor, grind the almonds into a fine meal. Add the sugar and continue to process for another 15 seconds. Finally, add egg whites and almond extract, continue to process until a smooth dough forms around the blade.
3. Using a teaspoon, place well rounded spoonfuls of dough onto prepared baking sheets. Cookies should be at least 1 1/2 inches apart. Bake in preheated oven for 20 to 30 minutes. Cookies should be golden. Allow cookies to cool completely on the paper before removing. Store in a dry place.

This was the best Amaretti that I have ever tasted. Though the recipe was simple, it did the job perfectly. As usual, the egg whites + sugar created a texture that was like condensed milk but less thick. The grounded almonds made the texture very moist and crumbly. I did a variation using just plain flour, and it ended up like a dry dough smelling of egg white which was total yuck. These amarettis tasted very fragrant and yeah..the best! I think I spent about $1 of ingredients making only 4 of these. That’s expensive, now I know why most cake stores don’t make them
