Cookies – Pineapple Cookies 9/10



• 2 tablespoons and 1/2 teaspoon shortening 25g
• 3 tablespoons and 1/2 teaspoon white sugar 40g maybe add more
• 1/8 egg 1/8-2/8
• 1/8 (8 ounce) can crushed pineapple with juice 30g-add more pineapple
• 1/3 cup and 2 tablespoons all-purpose flour 60g
• 1/8 teaspoon baking soda 0.6g
• 1/8 teaspoon salt 0.4g
• 1/8 teaspoon ground nutmeg 0.1g
• 1 tablespoon and 1/4 teaspoon chopped walnuts (optional) 8g

This recipe’s Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 5 dozen.
1. Mix shortening, sugar and egg thoroughly. Stir in pineapple.
2. Mix flour, baking soda, salt, nutmeg, and nuts. Add to pineapple mixture.
3. Chill at least one hour.
4. Preheat oven to 400 degrees F (200 degrees C).
5. Drop by teaspoonfuls on lightly greased cookie sheet, about 2 inches apart. Bake for about 8 to 10 minutes, or until no imprint is made when touched lightly. Variations: Add one cup of coconut (omit nutmeg) or add one cup of raisins, if desired

Tasted fatty and sweet which explained why it tasted quite nice. The pineapple + fat was a perfect combination, and reminded me of Chinese cookies made with lard. I liked the taste very much, but I won’t taking a bite of this again.
