Cake – Easy Pineapple Cake and Jamaica Cake 8.5/10

Cake – Jamaica Cake (lighter colored, as sweet asEasy Pineapple Cake) 8.5/10

• 1/2 cup and 1 tablespoon white sugar 115g –Use half white half brown, and reduce everything by half.
• 1/4 cup and 3 tablespoons vegetable oil 100ml —Reduce by 33%
• 1/4 cup and 3 tablespoons chopped pecans 50g
• 3/4 cup and 1 tablespoon and 2 teaspoons all-purpose flour 105g
• 5/8 bananas, peeled and diced
• 7/8 eggs
• 1/4 (20 ounce) can crushed pineapple with juice 141g
• 1/4 teaspoon vanilla extract 1ml
• 1/4 teaspoon salt 2g
• 1/4 teaspoon baking soda 1g

• Mix together sugar, vegetable oil, pecans, flour, and bananas in a 13 x 9 inch pan. Stir in the eggs, pineapple (with juice), vanilla, salt and baking soda. Mix well. Do not mash the bananas.
• Bake in a preheated 350 degrees F (175 degrees C) oven for 60 minutes or until cake tests done.

It was a perfect balance. I reduced the oil by 33% and it turned out good. This was done in 40minutes on a muffin tray. Though I could have taken it out at 30-35minutes.

Cake –Pineapple – Easy Pineapple Cake (browner colored for some reason?)(no oil or butter! As sweet as Jamaica cake) 8.5/10

• 1/2 cup all-purpose flour 60g
• 1/2 cup white sugar 100g
• 1/2 eggs
• 1/2 teaspoon baking soda 2g
• 1/4 teaspoon vanilla extract 1ml
• 1/4 (20 ounce) can crushed pineapple with juice 141g

• 1/4 (8 ounce) package cream cheese 56g
• 2 tablespoons butter 30g Maybe reduce this by 50%
• 1/4 cup and 2 tablespoons confectioners’ sugar 45g
• 1/4 teaspoon vanilla extract

• Preheat oven to 350 degrees F (175 degrees C).
• In a large bowl, mix together the flour, sugar and baking soda. Make a well in the center and add the eggs, vanilla and crushed pineapple, with liquid from can. Mix well to blend.
• Bake for 45 minutes, or until a toothpick inserted into cake comes out clean.
• To make the frosting: in a medium bowl, combine cream cheese, butter, confectioners sugar and 1 teaspoon of vanilla. Beat until creamy. Spread on warm cake.


Apart from the overly sweet and buttery yucky addictive topping, this was a very good recipe. It was as good as Jamaica cake, with no need for any oil or butter which kinda suprised me. Umm, this actually looked done in 20minutes, but I took it out around 35minutes.

Major Conclusio and a comparison between the two
Sugar 100g and flour 60g. Pineapple cake is actually the same as Jamaica cake only Pineapple cake does not have butter or oil, but Jamaica cake has oil and bananas. Easy Pinapple cake turned out kinda dark colored, I think it got cooked faster than the Jamaica cake. Pineapple cake also was a bit wet and kinda to a bouncy sponge. Both are as sweet as each other, but Jamaica cake was less sweet, and as usual with the addition of bananas, the sweetness usually came after the cake dissolved in your mouth, so the sweetness was not as immediate as the Jamaica cake.
