Couscous – Asparagus and Feta Salad 7/10

• 1/2 cup couscous 85g
• 1/4 bunch fresh asparagus, trimmed and cut into 2-inch pieces ¼ bunch
• 2 ounces grape tomatoes, halved 55g
• 1-1/2 ounces feta cheese, crumbled 34g
• 2-1/4 teaspoons balsamic vinegar 10ml
• 1-1/2 teaspoons extra-virgin olive oil 8ml
• Black pepper, to taste

I used 1/3 cup of couscous to ½ cup of water and that turned out perfect.

-I used less feta and couscous
-I only used a teaspoon of basalmic vinegar

-Asparagus are very nice when steamed
-Just basalmic is too overpowering, but if you combine it with olive oil then it balances the flavor out evenly.
-Feta cheese goes well with asparagus and oil

This salad was quite good, but not that great. When I tasted the couscous with asparagus and tomato, it tasted a bit bland. However, when olive oil and basalmic was added, there was a little bit more flavor, but the vinegar flavor was still overwhelming. However, after I added some feta cheese, these two dominant flavors seemed to cancel out each other to create a salty oily sauce over the couscous which was actually quite nice. Is it worth making it again? I won’t be doing this again because I’m slowly turning away from having cheese in my diet.
